First you gotta rename that model (the retail model not your replacement)
So for example I'll rename Zombie/Classic.mdl to Classi2.mdl


In the qc add
$includemodel <whatever>.mdl

so for a zombie replacement you'd put
$includemodel zombie/Classi2.mdl

and compile it! and there ya go

Thanks to Fury_161 for telling us that it is possible to use $includemodel on a non animation model to grab teh animations!
